Roasted or Grilled Pork Loin with Blueberry Onion Sauce

Sweet blueberries and caramelized onions simmered in gluten free balsamic vinegar create a rich savory sauce that pairs beautifully with tender pork loin. This easy recipe is elegant enough for entertaining but simple enough for a weeknight dinner.

We often serve this recipe with a baked potato topped with extra blueberry onion sauce. The pork can be oven roasted or grilled depending on the season.

Ingredients

  • 3/4 to 1 pound pork loin
  • 2 tablespoons butter, divided
  • 2 medium onions, sliced
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons sugar
  • 1/4 cup port wine
  • 2 tablespoons gluten free balsamic vinegar
  • 1 cup fresh blueberries
  • 1 cup chopped cherry tomatoes

Instructions

  1. Choose your method: oven roasted or grilled.

  2. (Oven Method) Preheat the broiler.

  3. Broil the pork loin, turning occasionally, for about 20 minutes or until cooked through. Remove to a platter, cover, and keep warm.

  4. Meanwhile, melt 1 tablespoon butter in a large saucepan over medium heat.

  5. Add the sliced onions, salt, and black pepper. Cook until the onions are golden brown, about 10 minutes.

  6. Add the sugar and continue cooking until the onions are caramelized, about 3 minutes more.

  7. Stir in the port wine, gluten free balsamic vinegar, blueberries, and chopped cherry tomatoes. Bring the mixture to a boil.

  8. Thinly slice the pork loin and spoon the blueberry onion sauce over the top before serving.

Grilled Method (Outdoors)

Preheat grill to medium heat.

Remove the pork loin from the refrigerator 15–20 minutes before grilling.

Grill, turning occasionally, for 20–25 minutes or until the internal temperature reaches 145°F.

Remove to a platter, cover, and keep warm.

Prepare the sauce as directed in steps 4–7.

No need to season the pork loin.
