Blueberry Torta
Ingredients:
2 cups Fresh Blueberries
1/2 cup Sugar
1/2 cup Butter
2 Eggs
1/2 tsp Vanilla Extract
1 cup King Arthur Gluten Free Measure for Measure Flour
1 tsp Baking Powder
1/4 cup plus 2tsp Milk
1/3 cup Confectioner’s Sugar
Directions:
Preheat oven to 350 degrees.
Combine sugar, butter and vanilla extract.
Add flour, baking powder and eggs.
Beat until combined.
Add 1/4 cup Milk to batter.
Beat until combined.
Grease and use gf flour to coat 9” inch pan.
Spread batter in pan.
Wash Blueberries and pat dry.
Sprinkle across batter.
Bake until cake pulls away from sides of pan - about 35-45 minutes.
While cake bakes, mix confectioner’s sugar and 2 tsp milk to make the drizzle for the top of the torta.
Remove cake and cool for 10 minutes, remove from pan and drizzle with powdered sugar and milk mixture.
